Bioactivities of rowanberry phenolics

    Abstract

    We have been investigating different functional properties of rowanberry. The antioxidant activity was investigated using DPPH radical scavenging test and in liposome and emulsion oxidation models. The antimicrobial activity was tested against Escherichia coli, Salmonella enterica sv. typhimurium, Staphylococcus aureus, and Lactobacillus rhamnosus strains. Also the inhibition of fimbriae-mediated adhesion of E. coli to human erythrocytes was examined. Rowanberry and rowanberry phenolics exhibited strong antioxidative, antimicrobial, and antiadhesion activity.
