Abstract

The invention relates to a method for using side streams from berry industry in the manufacture of food compositions, where at least one side stream comprising pomace, press cake or sediment or a combination thereof, originating from berries, is wet ground from 1 to 5 passes in the presence of water to obtain a homogeneous suspension comprising particles having average particle size from 50 to 1000 micrometres, followed by blending said suspension with a food product or with starting materials during the manufacture of a food product. The invention also relates to food products comprising said suspension.
