abstract = "Monitoring of temperature-mediated adipose tissue phase transitions were studied in vitro using an Abbe refractometer. The 1-2-mm thick porcine fat tissues slices were used in the experiments. The observed change in the tissue was associated with several phase transitions of lipid components of the adipose tissue. It was found that overall heating of a sample from the room to higher temperature led to more pronounced and tissue changes in refractive index if other experimental conditions were kept constant. We observed an abrupt change in the refractive index in the temperature range of 37-60 °C..",
