Abstract
A hundred years ago brewing research was in the forefront of microbiological and biochemical research. Today achievements of research in molecular biology are applied in the brewing industry but research in breweries and brewery sponsored university research are much more pragmatic and steered by economical forces. This development reflects the general development of the industrial society and is not particular for the brewing industry.
