Abstract
Different quality determination methods for poultry were evaluated and
compared by VTT Biotechnology and National Veterinary and Food Research
Institute (EELA) in Finland in a project carried out in the Tekes research
programme "On line Measurements in the Process Industry". New quality
indicating methods including chemical analysis, electronic nose and
intelligent packaging systems were tested and compared to microbiological
studies and sensory evaluation. It could be concluded that the new methods
tested could be valuable quality indicating tools completing and partly even
replacing the traditional quality evaluation methods.
